I posted a question to some fellow friends on their favorite probiotic rich foods and here is what they came up with! Incorporating these lacto fermented foods is an important piece of the puzzle when it comes to your digestion. As a practitioner and professional chef, I have empowered many people to embrace this lost art. The benefits your body receives are tremendous. The bio availability of the nutrients associated with the foods becomes more than tri fold. Meaning, the naturally occurring minerals, vitamins and enzymes in those foods are enhanced by the process of fermentation. So for example, in cabbage, high in Vitamin C and K, the available amounts can be as high as 6 fold after proper fermentation. Beyond that, it is readily available to your body immediately after you eat it and is a aid in digestion. Your body’s PH of the intestine should be 1.5- 3.0 for proper function. Fermented foods are meant for maintaining your proper PH and general function of proper digestion. It is widely known that low acidity of your stomach and over growth of the bad bacteria compared to the good is a problem for more than 90 percent of the population. So the conclusion is, to incorporate more fermented foods into your diet for most people with exception to some due to dietary constraints. One fistful portion with each meal is the dietary recommendation for most of my clients. This enhances the proper PH throughout the day and night.
